Freeze-dried coffee is made by brewing, freezing, and vacuum-freeze-drying, which preserves much of the original flavor and aroma, resulting in a smoother taste similar to fresh coffee. It's 100% pure coffee with nothing added. Instant coffee, usually produced by spray drying, involves spraying coffee into hot air, leading to a quicker and cheaper process but with a more bitter taste; Maltodextrin is often added during this process.
